Mar 2020 –
La Petite Ferme Autumn Menu 2020
If you, like us, adore Summer in the valley of Franschhoek you may wish to press pause on the onset of cooler days that March has in store for us. This next quarter not only brings the promise of one of the most beautiful seasons in our valley but also, Chef Kyle and his team’s latest triumph- La Petite Ferme’s Autumn 2020 menu.
A word from our Head Chef, Kyle Norris
“Autumn is my favourite time of the year filled with warm colours and a valley that looks like it’s in permanent sunset. My inspiration comes from my time on a farm as a child doing my chores of raking the lawns under the big maple tree as it shed its Autumn leaves. Of days spent fishing with my Dad in the crisp mornings on the dams and my Mom, the ‘flower power girl’, in the forests collecting mushrooms for the sauces and dishes that she would make with them. The way we plate our classic recipe, the fish cakes, is taken from the memories I have of how my Mom would embroider her jeans – those colours and lines. And the de-hydrated vine leaf on our trout dish comes from the Shiraz vines in front of our beautiful hotel.”
Our featured dish on La Petite Ferme’s Autumn menu
Our Arancini dish has become a favourite amongst our vegetarians, and now we have bettered it by only using plant-based products. This vibrant dish features pure home-made vegetable stock, foraged wild mushrooms, organically grown apples and garden-fresh cauliflowers. To finish this perfectly home-grown dish off, we have added a dash of international flair – slices of black truffle from Italy. Delicious!
Wild mushroom Arancini (V)
Truffle cauliflower puree / Tempura burnt cauliflower / mushroom Ragoût / preserved wild mushrooms / deconstructed Waldorf salad / black truffle
