The Semillon portion for this blend combines grapes from cool climate Elim in Cape Agulhas and Franschhoek. Sauvignon Blanc from our Franschhoek Estate. Loads of tropical fruit aromas very true of Franschhoek Sauvignon Blanc, Semillon adding richness and length.
Hints of pineapple, passion fruit and black current. Acidity poised and balanced.
Winemaking
The Semillon and Sauvignon Blanc are vinified separately. There is a 12 hour skin contact on the Sauvignon Blanc which is then pressed and fermented in 100% stainless steel tanks. The Semillon is pressed and fermented in stainless steel tanks then transferred to old 228L barrels for 6 months aging on its fine lees. Bottle closure: Stelvin
